Vegan Not So Queso Dip

  • 1 (10 oz.) can Rotel (tomatoes & green chilies)
  • 1 cup water
  • ¼ cup nutritional yeast flakes
  • ¼ cup flour
  • 1 teaspoon Spanish paprika
  • 1 teaspoon salt
  • 1 dash garlic powder
  • 2 tbsp. Earth Balance
  • 1 (10 oz.) can Rotel (280 g)
  • 240 ml water
  • 30 g nutritional yeast flakes
  • 30 g flour
  • 5 ml Spanish paprika
  • 5 ml salt
  • 1 dash garlic
  • 30 g Earth Balance

HOW TO MAKE THE DIP:

  • Mix dry ingredients (nutritional yeast, flour, paprika, salt, garlic powder) in saucepan.
  • Add water to dry mixture, stir and turn heat on stove to medium. Whisk the mixture constantly until it thickens and begins to bubble.
  • Let mixture cook one minute.
  • Remove from heat and stir in Earth Balance buttery spread until it’s melted.
  • Stir in can of Rotel and heat mixture a few more minutes.
  • Pour over chips or use as dip.

COOK’S NOTE

Nutritional Yeast Flakes: If you’re new to this ingredient, you can easily pick it up at your local health food store. Don’t confuse it with active dry or brewer’s yeast. This cheesy substitute is a great additional to your diet as it’s a complete protein with 18 amino acids. Just half a teaspoon also provides you with a day’s worth of B vitamins.

Earth Balance Buttery Spread: This is a great vegan substitute for butter in most recipes. You can find it in both heath food stores and grocery stores. 

This recipe is so versatile! While the dip goes great with nacho-style chips, you can also use it as a cheese sauce with pastas for a fake mac and cheese recipe, cheese substitute on vegan tacos, or put it on crackers, potatoes or cooked veggies. Feel free to try it anywhere you would use cheese dip.

Instead of canned Rotel, if you want a more fresh take, try adding a handful of fresh cherry tomatoes and two fresh jalapenos (de-seeded) and blend them together for an extra kick.
