  5. Turn on the rice cooker and cook the sushi rice. If you are using a more modern rice cooker like an IH or Fuzzy-logic, then you’ll get a separate cooking setting for sushi rice. This should run about 45 minutes or more.

  7. Once the rice is cooked, let it sit for about 10 minutes and transfer to a big bowl.
  8. Remove the bottom layer of the rice which is the usual dried out parts.
  9. Fluff the rice with your spatula to ensure that the seasoning sips in.
  10. Pour in the vinegar seasoning around the rice and mix well to evenly distribute (keep your spatula moist or damp so the rice won’t stick). Measure a cup of vinegar seasoning to a cup of sushi rice.
  11. Your sushi rice is ready to serve! You can serve the rice at room temperature. If you are going to make sushi, then cover the bowl with a damp towel to keep the rice moist until ready to use.

  1. On a medium-sized pan, add 9 parts of rice vinegar, 4 parts of cane sugar, and a part of salt.
  2. Mix well and cook on medium heat for 3 minutes or until all the ingredients are dissolved.
