  • 3 cups water
  • 1 teaspoon salt
  • 1/2 cup rolled oats
  • 1/2 cup steel cut oats
  • 1 tablespoon fresh lemon juice
  • Toppings
  • 1 ripe avocado, pitted and diced
  • 1 pint cherry tomatoes, halved
  • 2 tablespoons roasted sunflower seeds
  • 2 tablespoons sliced almonds
  • 1 teaspoon sesame seeds
  • 4 tablespoons olive oil
  • Sea salt and fresh ground black pepper, to taste
  • Oats
  • 700 ml water
  • 3 g salt
  • 50 g rolled oats
  • 50 g steel cut oats
  • 15 ml fresh lemon juice
  • Toppings
  • 1 ripe avocado, pitted and diced
  • 1 pint cherry tomatoes, halved
  • 8 g roasted sunflower seeds
  • 8 g sliced almonds
  • 3 g sesame seeds
  • 60 ml olive oil
  • Sea salt and fresh ground black pepper, to taste

HOW TO MAKE CRUNCHY SAVORY OATS:

  • Bring the water to a boil in a medium saucepan. Add the salt and the oats. Reduce to a simmer and cook for 12 minutes. Add the lemon juice and turn off heat.
  • Divide into bowls and top each with the avocado, tomatoes, nuts and seeds, and a drizzle of olive oil.
  • Serve warm.

COOK’S NOTE

If you have a good quality vegetable broth, you can use that instead of water for even more flavor. Reduce the salt by half if you go this route, as broth has more sodium.

GOURMET NOTE

If you have the time, you can make your breakfast a bit more indulgent by adding some chopped fresh herbs. Any combination will do, but cilantro, basil, or parsley would add freshness and flavor.

BUDGET NOTE

While oats are traditionally inexpensive, buying them in bulk if your store allows it will save you even more cash. If you can buy your nuts and seeds in bulk too, you’re saving double!

As an additional tip, a small cherry tomato plant is easy to care for and will produce a season’s worth of delectable tomatoes for a only few dollars.
